Radicchio

You can probably recognize a head of Radicchio without any challenge. It’s that big red and white ball that kind of looks like veiny red cabbage! And you’d be right, because red cabbage tends to only be white once you cut into it. But Radicchio isn’t bitter because of the confusion. It just grows that way! That bitterness can add some great punch to your salads, and that’s why it is commonly used in bold-flavoured mixes. It’s also particularly low in fat and sodium, and is a good source of vitamin C, so it’s a bite that rewards you with a nod to your health!
