Escarole

Grill it. Sautée it. Toss it in your salad! However you use Escarole, it’s a satisfying addition to your culinary arsenal. Its leaves have the look of Butterhead Lettuce at their ends, but it has a stronger flavour and consistency, making them versatile for use in everything from salads to soups and stews. You could even use it as a pizza topping or filling, in place of, or with, spinach! It’s also extremely low in fat, high in fibre, and offers a good portion of your daily requirements for vitamin A, vitamin C and iron.
